Reynold Poernomo’s Koi Dessert Bar and Dining is known for creating fresh, expertly balanced dishes – from intricate, glossy parcels of dessert to artfully stacked layers of savoury snacks.
Now the team at Koi has undertaken a new challenge: from May 28 to August 20, they will serve a special Winter Dessert degustation menu paired with two Roku Gin cocktails, matching sweet flavours with the botanicals found in the Japanese craft gin.
The five-course menu is priced at $65 (or $90 with the paired cocktails and international wine). The experience begins with Essence – green-apple gel with lime yoghurt, grape jelly, Midori pearls, sorrel and chervil – paired with the refreshing Roku Sencha cocktail (Roku Gin, green tea and yuzu). Next is White Noise – jasmine gelato with coconut parfait, strawberry pebbles, strawberry-gum jelly, white chocolate coconut crumble, orange-blossom yogurt gel and lychee pearls – served with a 2016 Marcarini Moscato D’asti from Piedmont, Italy.
The Roku Momo cocktail (Roku Gin with peach and orange) is matched with a very red dish called Shades, incorporating blood-peach ganache with berry joconde, pomegranate veil, rose, blood-plum slices, beetroot powder, grapefruit-scented gelato, Campari gel and raspberry. The ominously named Black Hole dessert, comprising dark-chocolate-and-milo cremeux, hazelnut-and-barley crunch and artichoke-and-whisky caramel, is paired with a glass of 2016 Mouton Cadet Reserve from Sauternes, France.
To finish, there’s a small bite of Spaced Out, made from passionfruit, turmeric, sea buckthorn and mandarin. Roku G&Ts can also be purchased on the ground level of Koi from the Roku pop-up bar.
