Tokyo Lamington x Barista’s Choice by Vitasoy Tres Leches Special

And as far as desserts go, Tokyo Lamington is no slouch in the vegan stakes either. For years the bakery has been developing an egg- and dairy-free variation of its flagship product, and has finally cracked the code.
For one short but sweet week in April, you can try the exclusive new plant-based treat. The special release is a tres leches lamington, a spin on the Latin American cake of the same name.
It’s made from two layers of vegan sponge cake, soaked in coconut milk, dairy-free sweetened condensed milk and Vitasoy soy milk. Sandwiched between them is a dollop of silky vegan cream folded with house-made vegan dulce de leche. To finish, the cake is dipped in house-made vegan white chocolate and coated in coconut flakes.
It’s the perfect companion to an oat latte made using the Barista’s Choice by Vitasoy range, a new line specifically optimised for coffee machine use.
