Sydney Seafood School Spring Class Series at Sydney Fish Market
As anyone who’s ever quizzed the fishmonger on the provenance of their prawns will know, Sydney Fish Market is more than just a spot to grab some protein for dinner – it’s a bounty of expert knowledge.
That knowledge comes to the fore this spring, when the market’s own Sydney Seafood School kicks off its spring class series. From hands-on cooking experiences and detailed demonstrations to guest chef masterclasses, it’s all designed to showcase the sourcing, prep and serving of all your favourite treats from the deep.
The year’s spring schedule features an array of top guest chefs, deep dives into cultural cuisines and seasonal specials.
They’ve called in some of the top names in food, with Christine Manfield talking native ingredients, Jennifer Wong detailing Australian-Chinese cuisine, Clayton Wells divulging his secrets to fine dining flair, Hayden Quinn hosting a summer barbeque class, O Tama Carey sharing her Sri Lankan cooking knowledge, Belinda Jeffery offering an artisan pastry workshop, and Danielle Alvarez sharing insights from her new book.
There are also two Sundowner Sessions: classes for the kind of student who doesn’t want to get their hands dirty. Instead you can sit back and watch as chefs give detailed demonstrations in the school’s theatrette, then get to taste the final dishes. Here, Porcine's Nik Hill will showcase classic French cooking, while Fratelli Paradiso's Trisha Greentree will lean into spring Italian fare.
The schedule includes a range of cuisines, so you can see how the likes of Thailand, Morocco, Mexico, Korea, Singapore, Spain, Italy, Greece and more like their seafood, while the series’ seasonal specials include a Seafood Brunch class (think prawn rolls, a crab omelette and smoked salmon zucchini fritters), alongside the Mediterranean Odyssey and Italian Seafood Feast, which will transport you to warmer climates without leaving Sydney.
The exciting new line-up hasn’t replaced the classic sessions. The always-on schedule includes classes like Seafood Basics, Seafood Specialist, Spanish Paella, Singapore Chilli Mud Crab, Seafood BBQ, BBQ Master, and more.
