Suntory takes over Prefecture 48 with a three-month celebration of spirits, highballs, cocktails and culinary talent– including a collab with Sydney’s own Tetsuya Wakuda.

A new drinking experience arrives in Sydney as Suntory Bar moves into a new home for 2025, undertaking a three-month residency inside the city’s dedicated Japanese culture and dining precinct Prefecture 48.

Running from August 8 to November 8, Suntory Bar celebrates Suntory’s legendary range of spirits, from Japan’s delicate Roku Gin to renowned Islay whisky brand Laphroaig. Suntory developed this impressive stable over its more than 125-year history, which began in 1899 with a store in Osaka that attempted to popularise Western wines and liquors in Japan. Expect a menu full of refreshing whisky highballs and other Suntory signature serves, plus creative cocktails developed in collaboration with Prefecture 48’s award-winning bartenders.

The hero of the menu is the Hakushu Highball, made with Hakushu Distiller’s Reserve, soda and mint. It pairs perfectly with an exclusive snack co-created by Tetsuya Wakuda – marking the first opportunity to taste the acclaimed Sydney chef’s cuisine in Australia since the closure of his eponymous restaurant last year. Other cocktail highlights include The Boss, a take on Irish coffee that uses Suntory’s own Boss Coffee, and classics like a Laphroaig Penicillin.

Suntory Bar’s drinks list spans some of the brand’s most recognisable labels, including Toki Whisky, Hibiki Harmony and Haku Vodka, as well as international favourites like Jim Beam Black and Maker’s Mark. There’s also The Premium Malt’s beer, Minus 196 and Canadian Club RTDs, plus whisky flights for the connoisseurs.

The takeover will also host a rotating line-up of international bartenders and chefs, serving limited-edition dishes and drinks alongside the regular menu. It’s an ever-evolving showcase of Japanese technique, innovation and hospitality, from 5pm every Tuesday to Saturday.
