Baba’s Place, Sakura House, 40 Res and more are taking over the Darlinghurst corner spot, for a lunch series powered by often overlooked ingredients.

Avia, the Darlinghurst wine bar just off Oxford Street in Taylor Square, is getting ready to start the next run of Re:Purpose, its guest-chef series with a focus on sustainability. The Sunday sessions are powered by ingredients that are usually scrapped – and first in the kitchen is Nick Sherman of Sakura House, on May 3.

The theme of the series is simple: build a menu of dishes around ingredients that are destined for waste. From midday, Sherman’s serving tuna buns and mini bowls of chawanmushi, parmesan-topped koshikari porridge and more. Plus, there’ll be a few special cocktails.

For the debut run, the team welcomed The White Horse, then Attenzione, Cicerone Cucina Romana and Dear Sainte Eloise. And this time round it’s The Palomar, Fabbrica, 40 Res, Ito and Baba’s Place.

Tables are limited, bookings recommended.
