Since reopening post-lockdown, soda-specialty CBD bar PS40 has been inviting chefs from some of Sydney’s best diners to take over its kitchen on Tuesdays. Owner Michael Chiem says the initiative is all about shining a spotlight on talented chefs who work in great restaurants but don’t necessarily have their names on the door.
The latest instalment features Alex Yu, sous chef at upmarket Pyrmont diner Sokyo. He’ll be prepping a seven-piece omakase menu for $50 (including a cocktail). A vegetarian option is available upon request. It’s an affordable way to try Yu’s expert food (and one of Chiem’s clever cocktails) without paying Sokyo prices.
