When you combine ex-Lotus head chef "Big" Sam Young (nickname Juicy) and ex-Poly chef Grace Chen (Instagram handle @superbananana) you get Juicy Banana. The culinary duo will be taking over CBD bar PS40's kitchen for two Tuesdays and two Wednesdays in January with a five-snack menu that flits across cuisines.
Expect dishes such as an umami-packed shrimp-salt popcorn; Young's own blend of mortadella, crafted by Kogarah's Pino's Dolce Vita; and a "big banana dog" – a Frankfurt-style hot dog, topped with yakisoba, burger cheese sauce and bolognese.
The menu is $65 per person and includes a cocktail on arrival. There are seatings at both 6pm and 8pm on January 19, 20, 26 and 27 (note: January 19 and 26 have sold out).
