The next edition of CBD bar PS40's excellent Takeover Tuesday series sees two up-and-coming Sydney chefs come together for two nights under the moniker Cleo. Laura Rheinlander (Sixpenny) and Sam Galloway (Bistrot 916) will team up to create a menu that makes the most of late-summer produce.
For $65, diners will get five snacks, plus a cocktail on arrival. Expect dishes including a potato galette with gribiche and anchovy; a pretzel with schmaltz and caraway; and melon with hibiscus and umeshu peach.
And the name? It's a tongue-in-cheek reference to trailblazing women's magazine Cleo – Sixpenny head chef Daniel Puskas was a finalist in its 2011 Bachelor of the Year competition.
The takeover runs on March 2 and 9, with seatings at 6pm and 8pm.
