PS40 Takeover Tuesday x Bar Liberty

PS40’s Takeover Tuesdays are standout. Guest teams head into the Skittle Lane bar to take over the kitchen with their own fare, while PS40's own libations – many starring the house-made sodas – are the happy constant.
This time round, Bar Liberty head chef Zackary Leon Furst is travelling north, bringing his contemporary Australian-Polish plates to town for one night. The Melbourne-based Furst has spent time in the Attica kitchen, as well as Collingwood fine diner Ides. His four-course Sydney menu kicks off with herby fermented cucumber, flowing through to cheesy paszteciki (classic Polish hand pies) and a buttery serve of kluski slaskie (potato dumplings).
There are two sittings available, at 6pm and 8pm. Each includes four courses and a Four Pillars cocktail on arrival. Plus, there’s a pair of optional add-ons – including a honey cake with Bloody Shiraz -spiked custard.
