The season for ripened and prized truffles in almost here, and the visionaries at Messina's Creative Department have already put together their dream dinner menu for when the beautiful delicacies land.
Rich black truffles from Manjimup, WA are being used in four of the eight planned dishes. The full menu is still being tweaked, but expect brown-butter gelato with roasted celeriac, egg yolk and truffle noodles and celery leaf oil; smoked bone marrow gelato with Wagyu 9+ ox tongue and kosho, a Japanese citrusy chilli paste; and salted yeast caramel gelato with brioche, truffle, plum and port.
Each dish comes with non-alcoholic beverage pairings such as kombucha and tea, although boozy options can be had for an extra $50.
Seatings are Thursdays to Saturdays at either 6pm or 8:30pm. Tickets go on sale on Monday May 3.
