This was in the minds of the Poernomo brothers when they opened their now-renowned Koi Dessert Bar in Chippendale, Sydney, back in 2016. Now Koi is opening up its celebrated kitchen for special two-hour culinary workshops with the “king of desserts”, chef Reynold Poernomo.
Reynold will reveal his culinary secrets and lead participants through a step-by-step tutorial for making his signature Moss: a sweet aesthetic wonder of greens and whites that showcases ingredients ranging from pistachio mousse and green apple sorbet to dulce cremeux and nitro lime yoghurt foam.
