What's been dubbed Australia’s first AI-generated restaurant concept will take over North Sydney restaurant Rafi with experimental lighting, LED installations and food and drinks, all inspired by earth, air, fire and water.

Earlier in 2023, Sydney restaurant group Applejack (Rafi, Bopp and Tone, The Butler) hosted a competition encouraging participants to develop a restaurant concept with the help of artificial intelligence. The winning concept, Luminary, is taking over Applejack’s North Sydney restaurant Rafi for one week. Luminary is inspired by the four elements – earth, wind, fire and water – which are integrated into LED installations, light displays, and food and drink.

Applejack’s director of culinary, Patrick Friesen, and Rafi’s executive chef, Matias Cilloniz, have crafted a menu inspired by those elements – with theatrical flourishes to match the dynamic dining room. Water-inspired dishes such as South Coast tuna with tomato, tahini and “iridescent” chilli oil will be served on dry ice, while local produce is the focus for the earth element, in dishes like burrata with bottarga, thyme and fig.

Flame-licked dishes will represent fire – think coral trout with caper leaves and fermented chilli, and calamari with butter beans and black pudding. The dessert menu will be air-inspired, including an airy whipped chocolate mousse with salted caramel.

Botanicals, imperfect fruits and food scraps will be reworked into cocktails, including the earth-inspired Botanical Beet with Four Pillars dry gin, Mistelle Rhubarb liqueur, beetroot and aloe vera.

Luminary is not ticketed, but restaurant bookings are advised.
