Lox in a Box x Studd Siblings

It’s not just cheese of the creamed variety that pairs well with bagels. Haloumi, among other fromage, makes a pretty tops filling as well. To that end, newish Bondi bagelry and deli Lox in a Box has teamed up with the Studd siblings – the two youngest children of cheese king Will Studd – to create a limited-edition haloumi bagel.

The Aphrodite Halloumi Bagel of Love will be available on Saturdays and Sundays until August 23. Ellie and Sam Studd have sourced the Aphrodite Halloumi from Cyprus. It’s made with a combination of goat’s and ewe’s milk, and crafted by Cypriot shepherds. For the bagel, a thick slab of it is fried and paired with bread-and-butter pickles, jalapeno slaw, Louisiana hot sauce and a smoky house-made sauce.

Lox in a Box is open from 8am to 3pm Saturday and 9am to 3pm Sunday.
