Koko Black x Black Star Pastry for World Chocolate Day
Every year, specialty chocolate maker Koko Black collaborates with like-minded chocolate-loving folks to celebrate World Chocolate Day. Last year it set its sights on cake, creating a rich, celestial masterpiece in partnership with one of the best in the business: Black Star Pastry. This year the two have joined forces once again for the same occasion, but with a new offering.
The cake is called Theobroma: Food for the Gods, and features seven decadent layers inspired by the cacao fruit. The creation’s key ingredient is cacao juice extracted from the flesh around the cacao bean, then fermented into a sugar syrup with a fruity aroma.
The seven layers include a cacao shortbread, caramelised puffed buckwheat and quinoa crunch, chocolate mousse, a cacao sponge and cacao juice crémeux. The cake is adorned with chocolate leaves, twigs and a dark chocolate cacao pod for garnish, with caramelised cacao nibs, cacao fruit compote and a white chocolate leaf to finish.
It’s available for one day only – World Chocolate Day, of course – at select Koko Black and Black Star Pastry stores in Sydney and Melbourne. The full four-serve cake costs $55, or you can grab a slice for $15. Pre-orders will be available online from Thursday June 30.
