Inside a heritage-listed sandstone building at The Rocks, The Doss House boasts more than 150 whiskeys across its rabbit warren of bars as well as an extensive cocktail menu. This February it can now add the Pie Felicia!
Inspired by a quip by Ice Cube in the 1995 movie comedy Friday, the Pie Felicia!, uses Roe & Co Irish Whiskey as its base, shaken and strained with Moreau Apple Pie Liqueur, lemon, sugar and egg white, served with freshly grated nutmeg.
The concoction is designed to highlight the natural vanilla and pear flavours in Roe & Co Irish Whiskey, made from Irish malt and grain whiskies aged in bourbon casks. Marrying the apple pie flavour of the liqueur and the Roe & Co’s spice and citrus hints, the Pie Felicia! works with the whiskey’s innate autumnal flavours to create a sweet moment ideal for warm evenings.
The exclusive new Pie Felicia! Cocktail is available from 7th Feb to 28 Feb. The Doss House suggests pairing the drink with the Ploughman’s Board, featuring honey mustard glazed ham, Scotch egg, cheddar, brie, pickles, mustard and brown Irish soda bread.
