For over 30 years, the Sydney Seafood School (SSS) at the Sydney Fish Market has reeled in tens of thousands of students, from amateur home cooks to seasoned professionals. Its classes – often taught by some of Australia’s best-known chefs – are hands-on affairs that teach you the best way to cook anything that comes from the ocean.

The in-person classes at the Pyrmont market are on pause right now, but in May the SSS launched a series of affordable at-home classes. Sign up and you’ll get a meal kit of ingredients delivered to you – and a link to a video to cook along to. And just like the regular classes, you’ll be taught by some of the top chefs in the country.

The next masterclass will be taught by Lennox Hastie, of acclaimed Surry Hills diner Firedoor. Hastie has become renowned for his minimalist cooking style, which focuses on cooking over open flames to express the flavours of his ingredients as purely as possible. He’ll be teaching you how to cook grilled octopus with heirloom potatoes and grilled cavolo nero.

All you need to do is book a spot; pick up your meal kit (if you live within 15 kilometres of the Sydney Fish Market, the SSS will deliver to you); then cook along to the step-by-step video when it’s convenient for you. Your meal kit comes with fresh Tasmanian octopus from the market, all the other ingredients, some pantry items and chocolate for dessert. And it comes with enough to feed two, so you can either cook with a partner or family member – or have some decadent leftovers to look forward to.

Hastie will be cooking over a woodfired barbeque, but the recipe will be fine to cook on any kind of barbeque (or even a very hot pan).
