Step behind the scenes of a pioneering rum and gin distillery nestled in the countryside, followed by a lunch of garden-fresh produce and cocktails by the sea.

Shore up your knowledge of local spirits with an intimate guided tour of one of New South Wales’s most unique distilleries – complete with tastings.

Husk Distillers is a rural North Tumbulgum oasis specialising in Caribbean-inspired agricultural rum. Founded a decade ago, Husk has pioneered the localised distilling of this complex rum, which is made from the juice of crushed sugarcane harvested directly from Husk’s own plantation.

The daylong RedBalloon experience begins with a morning pick-up in a luxury vehicle from accommodation on the Gold Coast or in Byron Bay and Tweed. Explore Husk’s unique operation with a guided tour and sample its range (including the world's first colour-changing gin), before heading to Mavis' Kitchen in Mount Warning for a two-course lunch showcasing organic seasonal produce. The day finishes with summery cocktails by the sea at Paper Daisy, the in-house restaurant at Cabarita Beach’s immaculately restored Halcyon House.
