Melbourne bar Byrdi comes from Luke Whearty and Aki Nishikura, the couple behind celebrated Singapore bar Operation Dagger – so lauded for its innovative techniques it reached 23 on The World’s 50 Best Bars list in 2018.
The dynamic duo’s latest venture has already landed at number 80 in the World’s Best Bars list, so it’s no surprise they’re part of celebrations for World Class Cocktail Festival – though perhaps what they’re offering is.
The team have collaborated with cult chicken burger brand Butter to create the Dirty Byrdi. It’s a limited-edition (fat washed) Butter Fried Chicken CÎROC vodka Martini. It will be available to the public only for a limited time during the festival – chicken and martini lovers beware.
Grab the drink on its own for $15 (it comes with one chicken bite as a garnish) or amp up the bites to three on the side with sauce for $22 total. If you’re still peckish, try the combo of a Don Julio Cherry Cola Slushie with an OG Sandwich (crispy chicken thigh fillet, dashi butter, pickles on a steamed potato bun) for $29.
