Dine Out: Raices de Dos Mundos at Callao
Peruvian-Japanese, or Nikkei, cuisine is still largely underrepresented in Australia. But we’re lucky here in Sydney – Callao in Barangaroo is one of the best places to try it. For the entire month of August, the waterfront diner is serving a luxe menu celebrating this vibrant fusion – Raices de Dos Mundos (“The Root of Two Worlds”) – exclusively for Broadsheet’s Dine Out festival.
The menu is inspired by two major cultural festivals in which food plays an important role: South America’s Pachamama Raymi, “a tribute to Mother Earth” celebrated in Andean countries including Peru; and Japan’s Obon, a Buddhist festival honouring one’s ancestral spirits.
If you’re completely new to Nikkei cuisine, here’s a taste from the menu: oysters with pisco granita, cucumber and jalapeno; tuna and kingfish sashimi with salmon roe, coriander ponzu and wasabi; and scampi tartare on bugak with truffle mayo, avocado, pickled jalapeno and Siberian caviar.
