Firepop’s ongoing Pop Stars series brings top Sydney chefs into the Enmore kitchen for unexpected and unforgettable one-night collaborations. Broadsheet’s Dine Out festival, now in its second year, is about the very same things.
This special edition of Pop Stars, presented with Doordash just for Dine Out, stars Oscar Solomon, development chef at the Apollo Group. He brings a distinctive style shaped by Greek hospitality, Japanese technique and a passion for charcoal cooking. Together, Solomon and Firepop’s own Alina Van and Raymond Hou will present a four-course, 12-dish set menu with optional paired drinks. The centrepiece is six kushiyaki, or Japanese-style skewers cooked over charcoal.
