Dine Out: Egyptian Scoops With Fabio Khalil

Sydney is hooked on Mapo gelato. Matteo Pochintesta keeps us coming back with his fior di latte, salted pistachio, and “better than Nutella” scoops. The Broadsheet Sydney office makes dedicated trips to Mapo Darlinghurst for the granita topped with mascarpone soft serve.
For Broadsheet’s second Dine Out Festival, Pochintesta has invited Baba’s Place head chef Fabio Khalil to collaborate on two limited-edition flavours inspired by his Egyptian heritage.
The first, Umm Ali – meaning “Mother Ali” – is inspired by a traditional Egyptian bread pudding dessert. It features croissant gelato (made with AP Bakery croissants), swirled with pistachio, almonds and golden raisins. The second, Karkade, is a sorbet inspired by a traditional Egyptian herbal tea of hibiscus, spearmint, cinnamon and cardamom.
Khalil will also serve a sister dessert at Baba’s Place: a slice of Umm Ali topped with Mapo’s croissant gelato, paired with Karkade tea.
The two limited-edition flavours will be available all week at Mapo’s Darlinghurst, Newtown and Bondi locations. Baba’s Place’s dessert special will also be available for the week.
