Grace Chen and Big Sam Young’s Castlecrag restaurant S’More Bistro is audacious in just about every way possible: the name, the out-of-the-way location, the luxurious menu that pushes lobster, Wagyu and caviar. It succeeded thanks to a sharp focus on produce and treating properly. This is a philosophy steak master and 20 Chapel owner and chef Corey Costelloe knows well.
For Broadsheet’s second Dine Out Festival, the two restaurants are coming together to celebrate one of the most luxe ingredients around today: black Australian truffles, in season from June to August. Costelloe and Young’s collaborative set menu will feature Asian and French flavours plus generous shavings of black gold, served tableside. Say when.
