Dine Out: Pepe Saya Soufflé Pancake Special

Bar Julius feels deeply European with its day-to-night continental menu and its iconic Louise Olsen ceiling mural. But for a week during Broadsheet’s Dine Out festival, head chef Will Francis is looking to Japan for inspiration. Francis’s muse is the Tokyo-style soufflé pancake that draw crowds of tourists and locals alike to cult cafes in Harajuku and Shibuya.
The Dine Out pancakes at Bar Julius have a whipped meringue-esque batter enriched with Pepe Saya cultured butter and cooked low and slow on the griddle. The pancakes are served in a wobbly stack, topped with a generous quenelle of Pepe Saya crème fraiche, warm and sweet maple syrup, and seasonal fruit (for health).
The pancakes are exclusively available during Dine Out and won’t be returning to the menu after the festival’s conclusion.
