Opening in July, Ashe is the latest restaurant from the Bentley Group, whose stable includes top Sydney restaurants Bentley, King Clarence, Eleven Barrack and Watermans. Led by King Clarence executive chef Khanh Nguyen, this 80-seat Southeast Asian grill sees the star chef cooking what he describes as the “most personal expression” of his career to date. There’s a strong Vietnamese influence, informed by his heritage, along with flavours from Thailand and Malaysia, alongside native Australian ingredients.
As part of Broadsheet’s second Dine Out festival, you can experience Ashe and its fire-driven menu before the crowds on Thursday July 30. Nguyen has created set menu with a welcome drink included, for $140 per person. Expect seafood, smoke, and one of the country’s best chefs in his element.
