Ama in Surry Hills will serve two dishes rarely seen outside Thailand, for two days only.

For last year’s Dine Out festival, Kate and Rowena Chansiri, the sisters behind Surry Hills noodle joint Ama, served two “lost” noodle dishes rarely seen outside Thailand. The sisters are back with Volume 2, featuring two Thai Chinese classics they say they’ve never seen on Sydney restaurant menus before.

The first is moo sub pla kem nuenga, a comforting bowl of pork mince, seasoned with soy sauce and white pepper, then topped with salted fish and salted egg yolk and steamed. It’s a deeply savoury and fragrant dish; the kind of thing many Thai Chinese kids might remember from their grandparents’ table.

The second is tom saap kradook moo sapparot, a pineapple pork-rib soup, which sees pork ribs gently boiled with pineapple, garlic, coriander root and white pepper until the broth becomes light, sweet and slightly tart. It’s perfect winter fare. Both dishes are available in a set with steamed rice for $30, exclusive to Dine Out.
