Broadsheet’s Dine Out is all about dream kitchen collaborations. Here’s one we’ll be dreaming about long after the festival is over: Redfern’s Lottie and Newtown’s Maiz will cook side by side on The Eve Hotel’s rooftop terrace for Mexico Sin Fronteras, a dinner that asks what Mexican cuisine can look like “without borders”.
Lottie’s Joe Valero will join Maiz’s Juan Carlos Negrete Lopez in the Lottie kitchen, where the two chefs will use Australian produce to create a set menu of Mexican dishes that don’t adhere to geography or tradition. The lineup is subject to change, but indicative dishes include venison taquitos wrapped in pumpkin-seed tortillas, and duck carnitas with beetroot mole.
