Dine Out: Txistorra del Gildas and Txakoli Special

The flavours of Spain’s Basque region are just a pintxo away at Gildas. For Broadsheet’s Dine Out festival, Lennox Hastie’s handsome wine bar will serve a $20 pintxos and wine special at every service from July 27 to August 2.

Included is a txistorra del gilda, featuring a chorizo-like sausage loved in the region for its smoky, spicy flavour. At Gildas, it’s made with pork shoulder and belly, minced together with salt, garlic and pimentón. It’s then glazed with honey and cooked over a woodfire, before being skewered with a guindilla pepper.

The txistorra del Gilda is paired with a glass of Txakoli, a lightly sparkling Basque wine poured from a height to create its signature gentle spritz and aromatic character as it hits the glass.
