By now, Sydneysiders should know that Ho Jiak founder Junda Khoo never does things halfheartedly. His restaurants are unapologetically big and bold. He brought that spirit to Broadsheet’s inaugural Dine Out festival in 2025 when he invited Masterchef star Brendan Pang and author Rosheen Kaul to the kitchen to explore their shared Chinese heritage. It was one of the most ambitious events on the program.

This year he’s doing it all again – albeit with three chefs of wildly different backgrounds, who’ll contrast more than they’ll harmonise. First up is chef, Tiktok mega star, cookbook author and former restaurateur Vincent Yeow Lim, aka Dimsimlim. Like Khoo, he has a deep chest of Chinese Malaysian dishes to call on, many family recipes stretching back three generations. He’ll be joined in the kitchen by Nip Liyanapathirana, aka Nipcooks, who’ll bring an arsenal of curries and other Sri Lankan dishes. Finally, French chef and former restaurateur Manu Feildel, best known for his time judging My Kitchen Rules, will add a Gallic touch.

How will it all come together? You’ll have to show up to find out, but an early set menu draft hints at XO butter scallops, Khoo’s signature laksa bombs and truffle Peking duck.
