For one night only, two of Australia’s foremost chefs will share a kitchen – and a grill. On November 4, Sydney’s Firedoor will host a special collaboration between the restaurant’s chef and owner Lennox Hastie and Chae’s Jung Eun Chae, the Melbourne-based chef renowned for her intimate, fermentation-driven Korean dining experience. Together, they’ll craft a five-course feast where the flavours of the hanok table and Korean barbecue traditions meet Firedoor’s signature elemental cooking.

Expect a dialogue in dishes – Chae’s deep umami, jang and pickles meeting Hastie’s mastery of wood and smoke. The menu will move from delicate to primal: smoked oyster with seaweed; blue swimmer crab; shrimp wrapped in pickled radish; grilled cabbage with doenjang cream; kangaroo yukhoe with tail broth; a seafood platter; and a Korean barbeque spread complete with banchan, doenjang soup and sanchae bibimbap. Finally, a cup of cooling pumpkin sikhye will bring the meal to a close.

Guests will be greeted with a Yuzu Cheong and Gin Spritz before settling in for an evening that bridges Seoul and Surry Hills, tradition and innovation, smoke and fermentation. Optional drink pairings are also available to complement the set menu.
