Carriageworks Night Market
Carriageworks Night Market is one of Australia’s most popular food events. The 2019 winter edition promises more than 50 of the country’s best chefs and producers in one place, sharing know-how and cooking up a storm.
The line-up this round is curated by James Viles, the Southern Highlands-raised chef behind Bowral’s Biota Dining. “Biota” is the native flora and fauna of a region, and Viles has built a reputation championing his own in the kitchen.
For the market, he’s chosen the theme of “wild”, to encourage attendees to think creatively about where they’re sourcing ingredients from and use them in their entirety.
His chosen chefs and stallholders – many of which are returning – include Josh Niland (Saint Peter, The Fish Butchery, Dwayne Bannon-Harrison (Mirritya Mundya), Andy Bowdy (Saga), Jordan Brogan (Alibi), plus A1 Canteen, Acre at Camperdown Commons, Bloodwood, Boon Cafe, Continental Deli, Edible Bug Shop, Gelato Messina, Porteño and Rising Sun Worksop .
Presenting Partner Starward Whisky’s accompanying drinks line-up is wild inspired, too, and the distiller has created whisky cocktails using three special ingredients sourced from within a day’s drive of where its spirits are made.
There’ll also be absinthe and vodka from Demoiselle Distillery, Marrickville-made gin from Poor Toms, and locally brewed beers by Wildflower Brewing and Blending, Batch Brewing Company and Young Henrys .
