Celebrated Greek chef Ntinos Fotinakis brings the best of the Mediterranean to Wolloomoolloo in this exclusive two-week kitchen takeover.

Get ready to taste the flavours of the Athenian Riviera this March, when celebrated Greek chef Ntinos Fotinakis takes over the kitchen at Manta for an exclusive collaboration with Sydney Restaurant Group. From March 21 to April 6, Fotinakis – executive chef at the renowned Bungalow 7 at luxury Athens resort One & Only Aesthesis – will bring his mastery of Greek coastal cuisine to the waterfront setting of Woolloomooloo Wharf.

Taking an innovative approach to Greek culinary traditions, the chef has designed an ingredient-driven menu inspired by the sun-drenched shores of the Mediterranean. Think moussaka croquettes, smoked yuzu taramasalata and spanakorizo gyoza, alongside larger plates like slow-cooked lamb shoulder, snapper with potato skordalia, and the signature astakomakaronada – fresh eastern rock lobster with linguine.

With Greek hospitality at the heart of the takeover, diners can expect personalised welcomes and tableside finishes by Fotinakis himself. The atmosphere is inspired by the lively, communal feel of Mediterranean seaside tavernas, where the summery, seafood-heavy plates are shared.

With a drinks list featuring ouzo, mastiha cocktails and Greek wines like assyrtiko and moschofilero, this will be full-blown cultural experience. Bookings run across lunch and dinner, with an à la carte offering and two banquet menus ($85 or $105 a head) to choose from. Either way, you’ll get a true taste of contemporary Greek coastal dining in one of Sydney’s most stunning harbourside locations.
