Late last year, beloved Melbourne pizza group DOC launched Bio by DOC, a diner doing vegetarian and gluten-free takes on Italian staples. Dishes such as eggplant parmigiana, saffron arancini filled with vegan brie, and a lasagne made with dairy-free bechamel have proved hits among those with dietary requirements – and those without.
And to celebrate DOC Surry Hills’ first birthday, the concept is making a short visit. For two weeks only, DOC’s Sydney outpost is serving an entirely vegan menu alongside its staple selection of pizzas.
Four of Bio’s most popular dishes have made the trip, and diners can enjoy a fully plant-based meal or mix and match with DOC’s regular menu items. There’s a vegetable tartare with capers and truffle paste; broccoli with a dash of fresh chilli served on a lush macadamia mousse; and the vegan lasagne, which is made with spinach pasta sheets and lentil ragu.
Perhaps most excitingly, there’s also a vegan tiramisu made with cashew cream to mimic mascarpone – gluten-free savioardi is drowned in coffee and [Amaro] Montenegro, filled up and layered with the cashew cream and topped with a 95 per cent dark chocolate ganache.
