Since launching late last year (with the help of an exclusive Broadsheet Access Readers’ Preview Dinner), Sydney’s The Palomar has more than found its feet despite being 16,000km or so from its lauded London progenitor.
The Levantine restaurant serves up local takes on the OG Palomar menu from its perch inside the 25 Hours Hotel The Olympia. All under the direction of executive chef Mitch Orr (Kiln) and head chef Luke Davenport, who began his career at The Palomar in London before stints at Noma, The Ledbury, Alo and Franca.
Now The Palomar is kicking off a guest-chef series called At The Table, and the first kitchen collaborator – appearing for one night only – is Joseph Abboud of Melbourne’s much-loved Middle Eastern institution Rumi.
Diners will enjoy a four-course set menu starting with whipped tahini, almond taratoor, house pickles, toum and more alongside nigella seed flatbread from artisanal bakery Pioik. Then it’s onto Rumi’s famed dish The Quail That Anthony Bourdain Ate and other mains including wagyu tongue skewer, spiced lamb shoulder, cucumber with green tahini and brussels sprouts in macadamia muhammara. Sweets to finish include poached apricots in arak labne and watermelon with rosewater.
