Before opening its permanent wine bar in March next year, classic Sydney diner Aria is giving the concept a test run. It's launched a a pop-up wine bar in cahoots with the world's oldest champagne house, Ruinart, and it'll be popping bottles until the end of January.
Open Thursday to Saturday in Aria's Wharf Room and Terrace, the bar will be offering champagne by the glass, bottle and magnum. There'll also be Martinis and whisky highballs. On the food front, expect oysters, cheese and charcuterie, alongside snacks such as abalone XO toast with black sesame; a crab sandwich with tarragon and burnt lettuce; and salt-and-vinegar pork skin with sumac and green peppers.
Bookings are encouraged, but space for walk-ins is available, with staggered 90-minute sessions.
From 5.30pm Thursday to Saturday.
