Michaela Johansson makes beautifully presented, ready-to-serve food boxes under the name Aplenty Spreads that you simply open and pop on the table for a dinner party, or on a rug for a picnic.
And for lockdown she’s launched a very cute Mediterranean pasta kit that highlights NSW small-scale producers and makers. It comes with fresh pasta ready to roll into pici (fat spaghetti) and all the ingredients to then transform it into a classic Sicilian dish, pasta con le sarde.
Johansson has sourced sardines, locally grown young garlic stems, unwaxed lemons, foraged wild fennel, raisins she’s soaked in white wine, pine nuts and a big hunk of locally made parmesan (there’s also a vego option). You’ll also get ingredients for a crunchy fennel-seed pangrattato to top your dish.
There’s a Zoom link to jump on a Saturday night pasta class run by Johansson, or you can just use the pack’s easy-to-follow recipe card and video instructions if you prefer.
To drink? The pack includes a pét-nat made by Southern Highlands winemaker Ari’s Natural Wine Co. Then set the table and light your new lemon-shaped candle, handmade in Wollongong by Broadsheet fave Nonna’s Grocer. Citrusy pasta, lively pét-nat and a cute lemon candle – a zesty meal in more ways than one.
