Sana
At Sana, chef Joel Bennetts (ex-Fish Shop, Burger Park, Peppe’s) and Dan Sorridimi (Blackwood) are going for one simple thing: flavour, and fast. The idea is to create food that is at once healthy, tasty and affordable.
The Mediterranean- and Middle Eastern-inspired menu offers seven signature bowls and four rolls (using Organic Bread Bar’s potato buns), as well as the option to curate your own protein plate or bowl.
You might go for the 24-hour slow-cooked, fork-tender lamb shoulder atop a bed of rice (cauliflower or Mediterranean-style), jazzed up by green herb salsa, green olives, jalapenos and garlic dressing.
The Sana (which translates to “healthy”, “wholesome” or “wellbeing” in a variety of Latin languages) is another standout. Accompanying spiced lamb mince are house-pickled zucchini noodles, sliced cucumber and spiced almonds.
