Bottles of James Squire and glasses of Chandon glimmered in the sun as racegoers descended upon The Peacock Lounge, the five-day-only, party-powered pop-up at Royal Randwick’s Winx Stand. If you’re heading to Sydney Everest Carnival this year, this is where you want to be. Live music, splashy surrounds and a yum-cha-style menu with star power: take a look at day one.
Frocks and suits alike brought big colour (and energy) – as did the dance floor, with Sydney local Teddy Cream hitting the decks after the raceday winners were crowned.
Plate after plate of dumplings and snacky skewers rolled out of the kitchen, where star chef Hayden Quinn is behind thewater-chestnut-and-prawn dumplings, fired up with Quinn’s own fire-engine-red chilli oil.. The satay chicken and golden-fried spring rolls (stuffed with lobster) were also clear favourites.

SIGN UPThe bar at centrestage kept things moving, with glasses of sparkling and James Squire on pour. Those less inclined to bust moves watched over the track from a plush booth.
