Oscar-winning filmmaker James Cameron’s original Avatar premiered in 2009. Thirteen years later, we got to watch the story continue in Avatar: The Way of Water. And on December 18, fans will be taken back to Pandora in an immersive new adventure – Avatar: Fire and Ash.

To celebrate the upcoming release, Sydney’s robata-style restaurant Ibushi will transform into an otherworldly experience for one night only. On Thursday October 2, chef Chris Kim will plate up signature dishes cooked over flames in a nod to the new film – and one Broadsheet reader can win a double pass to experience the theatrics.

Before the dinner, guests will be treated to a special 3D screening in IMAX Sydney of Avatar: The Way of Water, which is back in cinemas for a limited time. Then, on to the main event.

Every detail of Ibushi (part of multi-venue Japanese precinct Prefecture 48 on Sussex Street) is inspired by fire and smoke: ash-grey walls mimic charcoal, and an art installation – titled Kemuri, which roughly translates to “fumes” – on the ceiling by Filipino-Belgian wire artist Racso Jugarap replicates the movement of smoke.

Taking cues from Pandora – the Earth-like moon and home of the blue Na’vi – the fit-out will take on bioluminescent, magical qualities through installations by artist and florist Doctor Cooper.

A special-edition cocktail will be served on the night – Roku gin, Blue Curacao, coconut cordial and Supasawa (a sour, acidic mixer), combined into a glowing pour complete with a flaming garnish.

Speaking of fire, the true star of the show at Ibushi is the food. A highlight from Kim’s menu is the tender braised octopus, finished on the charcoal grill for added smokiness and topped with a teriyaki glaze and grated dehydrated oysters. A special mention also goes to the tuna tartare on crispy rice and the prawn tsukune (skewered meatballs, typically chicken but not in this version) cooked yakitori-style.

Kim has become known for his ability to play with the foundational elements of fire and smoke. He sees the robata grill as a creative canvas, and an opportunity to highlight local produce, particularly fresh seafood and seasonal vegetables. Fitting for the upcoming release of Avatar: Fire and Ash.
