After years of running his Sydney-famous al pastor tacos out of roving food carts and temporary kitchens, Toby Wilson’s nomadic streak came to an end with the opening of Ricos Tacos' first permanent space in the backstreets of Chippendale.
He’s transformed the corner-store building into a sunny dine-in taqueria, with splashes of yellow and white paint, peach-coloured foldable chairs, playful graffiti art painted straight on the walls, and a cork countertop at the window. A TV replays classic ’70s football matches for added nostalgia.
On the menu, expect Ricos staples including housemade chorizo and potato; beef and bean barbacoa; fried cauliflower and tahini; and crisp battered fish tacos. The selection of hefty tortas (Mexican sandwiches) is also impressive. Snackable corn chips and salsa are here, too, all of which you can down with a frosty Margarita or hibiscus and lemon myrtle iced tea. There’s also filter coffee and cold brew if you need an afternoon pick-me-up.
People had been following Wilson and his tacos around for years – from his Ghostboy Cantina eatery in a Chinatown food court, to Taco King at the George Hotel in Waterloo. And more recently, his permanent taco cart at The Grifter Brewing Company in Marrickville.
