Westfield scored Australia's very first outlet of Ippudo, Japan's most famous ramen chain. This location arrived a couple of years later, offering the same signature dishes such as Akamaru Shinaji, a 25-year-old tonkotsu recipe simmered for hours and topped with miso, garlic oil, pork, black mushroom and soybean sprouts.
The format is almost identical, too. The wood- and slate-accented room is geared for dine and dash, even if you take a few detours from the ramen by way of pork buns, gyoza or miso-marinated barramundi. The staff is expectedly efficient and will even let you choose from five different levels of firmness when it comes to your noodles. Just try finding that elsewhere.
