After extensive renovations, the space that used to be Darcy’s, on the corner of Hargrave Street became Guillaume. It is a beautiful, light space – elegant and comfortable with a minimal navy and grey palette, Hermès wallpaper, Pierre Frey fabrics and Matisse artworks. Guillaume will offer a full degustation experience alongside a flexible menu that will allow for more casual dining.
On the menu is basil-infused tuna, sensational Paris mash, Patagonian tooth fish, marron and a pork-cheek dish.
Heading up the kitchen is former Tetsuya’s and Est. head chef, Kevin Solomon. Sommelier, Chris Morrison will run the wine program, which will focus on Australian heritage wines to be stored in the restaurant’s original sandstone-encased cellars.
From November 1 onwards the restaurant will be open from each first Sunday of the month. Bookings are limited and will be taken two months in advance
