The easy-to-miss little slipway off Pitt Street, Bulletin Place has been given a shake-up, which all began with the arrival of this Spanish bar, Tapavino, in the later months of 2012.
A backlit red area behind the bar, illuminates an impressive display of multi-sized glass carafes, which were especially hand-blown for Tapavino. The remainder of the back wall is filled with imported Spanish wine, waiting patiently to be uncorked by a curious customer.
First and foremost, Tapavino is a sherry bar, with 80 styles poured by the glass. Owner Frank Dilernia is one of the growing clutch of champions of the Spanish fortified wine in Sydney, and he and Tapavino’s staff are more than willing to lend a hand in exploring a few lesser-known styles of sherry and Spanish wine. Try an apple-crisp, salty albariño to match a plate of prawn, chilli and avocado tostadas, or a manzanilla if you’re awaiting cured Spanish meats.
The menu, prepared by chefs Renee Anderson and Anna Knight, both of whom hail from stints at Paddington’s Buzo, is as inspired as it is extensive. Jamón serrano is served with goats curd and sharp pickled beetroot; and the range of salads is fresh, textural and colourful. A final wedge of dulce de leche tart is rich and unctuous and provides the perfect excuse for an accompanying glass of sweet sherry.
