Brother and sister David and Janet Hollyoak were well ahead of their time when they opened Redoak in August 2004. Back then, pubs rarely had more than six taps and lager was the sole choice.

Made in a dedicated brewery in Camden, Redoak's beers stretch well beyond that. They’ve included bocks, IPAs, stouts, honey ales, wheat beers and pale ales. The ever-changing tap list is complemented by a large bottle selection.

Redoak pairs food and beer: the menu comes with suggested beer matches and the tasting plate sees four beers partnered with four small dishes. Burgers, pizzas, steaks and curries round-out the menu.

The heritage-listed building was previously a shipbuilders’ yard and later a girl guides' hall. Now the room features velvet curtains, a long timber bar and walls decorated with pictures of hops.

The space is the culmination of a lifelong passion of David's. He started brewing ginger beer when he was 14 and moved onto the hard stuff as a uni student. Later he explored Europe and discovered a wealth of styles long since forgotten in Australia.

Back home, he griped about beer being wine's “poor cousin”. So he teamed up with his sister. Janet didn't know whether David was producing beers that were any good, so she began submitting them to competitions, such as the World Beer Cup – and they started winning. The rest is history.
