About Time is a nostalgia-fuelled pop-up bar by a group of Sydney hospo superstars, who have either worked at or owned a number of heavy-hitting venues including The Roosevelt, Opera Bar, and the Baxter Inn, to name a few.

The owners’ collective experience is put to good use across a menu of fun cocktails, food that nods to classic Australiana, and a careful curation of new and old world wines.

On the drinks front, you might find a boozy spin on the classic servo slushie – including a frozen Irish coffee and a Frosty Fruit-inspired slushie – plus other creations such as the Pavlova Milk Punch. There are also spritzes on tap for a lighter option, as well as beers and the aforementioned wines.

Taking cues from ’90s dinner-party classics, the food menu includes pork, lamb and veggies roasted over a charcoal fire and served in sandwiches or on share plates. There’s also house-made French-onion dip with Jatz. And, of course, the most ’90s of desserts: the Viennetta.

That nostalgia for ’90s Australiana stretches to the venue’s decor as well: it feels a bit like a Queenslander, with retro pastels in abundance. It’s positioned right near basement venues Restaurant Hubert, Frankie’s Pizza and Spice Temple – but unlike them, it has a patio for al fresco drinking and dining, and stays open late.

As for the name? It’s a play on the fact that this place is very much a pop-up, but also a reference to the owner’s finally working together on something as fun as this.
