Whimsy & Co is hard to miss. Operating out of a car park in Caringbah’s fairly dull industrial area, the bright blue coffee mobile stands out from its grey surroundings.
Owner Kathryn Bray trained as a barista at Coffee Alchemy, before buying and converting the flatbed truck. For a while, it appeared at markets in Hurstville and Marrickville. But then Bray realised Caringbah – where she stored the truck – was devoid of specialty coffee, despite being heavily populated.
She’s been here since late 2015, serving about a dozen different brands from all over the country, including Sydney roasters Coffee Alchemy, Wood & Co from Melbourne and Byron Bay’s Marvell St. This rotation ensures Bray can educate her customers on the best specialty coffee Australia has to offer, via espresso, filter and cold-brew.
Whimsy & Co opens at 5:30am, to catch the tradies. One of the things Bray likes about coffee is that everyone drinks it, from the CEOs of multinational companies to people living below the poverty line. She aims to cater to both.
For those who don’t want coffee there’s Prana Chai or Mörk hot chocolate. Baked goods come from Spotted Cow Cookies and Brasserie Breads.
