Little Raw Co. is simply decorated and centres around a display case stocked with small cakes, all topped with delicate edible flowers and brightly coloured fruits.

All of the desserts in the display case are raw, meaning the ingredients are never heated above 46 degrees in an effort to maintain their nutritional profile. Using combinations of coconut and nut products, the desserts are designed as healthy as any. The truffles, cheesecakes and cupcakes are also mostly organic and all vegan and free of gluten, dairy and refined sugar.

Owner Whitney Koitka was inspired to start the business after watching her grandmother bake while she was growing up and her own experiences with hyperthyroidism. She started baking for local weekend markets and now delivers all over Sydney. Cakes come in sizes ranging from single serve to 24 centimetres in diameter.

Alongside her desserts, Little Raw Co. also features what Koitka calls a “raw pantry”. Customers can pay by the weight for a selection of activated nuts, herbal teas, cacao nibs, organic coconut products and nut butters.

For customers hoping to linger, the coffee machine pours Bay Coffee beans from just down the road in Neutral Bay. Customers can also choose from a selection of drinks including hot chocolates and matcha and turmeric lattes, all of which can be made using dairy milk, coconut milk or soy.
