Kurtis Bosley has had a hand in a number of successful Sydney bars over the past few years. As the former group bar operations manager for the Public House Management group, Bosley worked at The Royal Hotel in Paddington, The Woollahra Hotel, Bistro Moncur and Bar Moncur in Woollahra, The Buena and Four in Hand in Mosman, and The Collaroy Hotel. It was only a matter of time before Bosley applied his expertise to a venue of his own.
That venue is Corretto, a bar and eatery in a prime spot on The Strand in Dee Why with a spectacular outlook to pine trees and the rolling ocean. The space is open from 8.30am on weekdays (and 7.30am on weekends) until late, serving breakfast, lunch, dinner and cocktails.
Bosley’s vision was for a venue that catered to all-day drinking and dining. The cocktails on Bosley’s menu are a fun reflection of this vision. Classics such as the All-Day Bloody Mary and the Mid-Morning Negroni are for pre-lunch drinking, and much of the drinks list is focused on light, fresh, fruity, bubbly flavours. The wine list has a strong focus on Australian wineries, including a pinot gris from the Adelaide Hills’ Vinteloper and a pet nat from Ngeringa. And the on-tap draught beer is rotated weekly.
The food menu follows a similar theme: fresh and varied, with a focus on seafood as a nod to the venue’s surrounds. From a classic Australian brunch menu (featuring smashed avo, zucchini fritters and a chilli-jam-spiked brekkie burger) to an elegant European-style all-day menu, Corretto’s dishes cover a range of cuisines. The tuna tacos are already a crowd favourite – a delicate tortilla stuffed to the brim with seared tuna, edamame hummus, Sriracha aioli, fresh kale and a barbeque-corn salsa.
The indoor space is light and bright and open, but the outdoor seating in the salty sea air is where the real magic of this venue lies. And best of all, like Bosley’s exquisite cocktails, it can be enjoyed from early in the morning until late at night.
