Brewristas is one of those cafes that could pass as a laboratory. Its naked cement counters are packed with spindly glass towers, racks of patterned ceramic cones and various other brewing paraphernalia.
Whatever you want, it’s here: espresso, V60, syphon, cold drip, cold brew, Vietnamese coffee and more. There’s even a house range of bottled coffee products, including cold brew, Brewtea, and Brewmonade – a mix of coffee and lemonade for those with a sweet tooth. The cafe roasts its own beans and offers selections from other roasters, too.
Behind this scientific operation are close mates Danny Luong, Katharine Suy, Steven Wong and Kenny Ly. They otherwise kept the space simple, with white walls and naked bulbs leading out to a rear timber deck, which is often filled with students.
Chef Adam McNeil (ex-John Smith Specialty Coffee) oversees a relatively familiar menu where the stand-out dishes are corn and zucchini scramble with smoked salmon and dill; a pearl cous cous salad with pumpkin and dukkah; and "The Fat Boy", a bacon and egg roll with avocado and hollandaise.
