Bill Granger’s legacy spans 19 restaurants worldwide, 14 cookbooks and five television series aired in 30 countries. He’s credited largely with exporting Australia’s convivial morning culture to the world, and will go down in history as one of our most influential chefs. To see where it all began, hightail it to his sun-drenched cafe in Darlinghurst.
Each weekend, queues snake around the corner as locals and tourists alike jostle for a spot at the central communal table and petite, banquette-lined back room; Granger’s no-fuss approach evident in the pared-back white and blonde wood spaces and crowd pleasing line-up of cafe favourites.
To this day, the cafe’s legendary breakfasts are the yardstick by which other cafes menus are measured. Bloody Mary-fuelled brunches of silky scrambled eggs and that avocado toast give way to laid-back lunches like coconut poached chicken with watercress and nashi pear (in sanga or salad form), or a grass-fed beef burger with gruyere, dill pickles and herbed fries.
A short and sharp wine list of local wines rounds out the offering, with the odd New Zealand and French appearance. But if it’s too early for a cocktail or a glass of sparkling, opt for an espresso, made using an in-house blend from Single Origin Roasters or a glass of homemade lemonade.
