Pillar’s minimal concrete look gives it a strong gallery vibe. Essentially it is one – owners Nate Tong, Uel Lim and Edwin Luo are giving a platform (or a pillar, if you like) to lesser known micro-roasters and producers at their Burwood coffee shop. The idea is to let the products it stocks – from the beans on the retail to wall to the treats in the pastry cabinet – do the talking.
The only caveat here is quality, which is why the team has partnered with Skittle Lane Coffee Roasters on the house brews. But it’s also flaunting beans by roasters only the most clued-up barista would know, including Sydney’s Block Company, and Melbourne’s Newav and Path. Those feature on the reserve pourover list, and hardcore drinkers can lean really in with a flight of the holy trinity (white, black and filter).
The food menu starts with things on shokupan, from gooey onsen eggs to yuzu marmalade with Pepe butter. Otherwise there’s Hainanese spring chicken salad, and a toastie jammed with smoked Wagyu, yuzu-pickled fennel and honey gochujang mayo. Pillar is also one of the only venues in town serving 15 Cenci Basque cheesecakes. One of these cult desserts will take your daily ritual to the next level.
